Recipe NOTE: We added more protein to the video version because I do not eat much of the rice. www.pouchfriendly.com Ingredients : 1 tsp evoo or canola oil 1 c each chopped onions, celery and green pepper 1 clove garlic 8 oz turkey kielbasa, casing removed and cut into bite size pieces 2 1/2 c low fat chicken broth 1 1/3 c salsa 1 1/2 c rice 1 bay leaf 1 tsp Cajun seasoning 1/2 tsp each thyme and oregano (dried) 12 oz bay scallops 1/4 c fresh parsley How to Prepare : Heat oil over medium-high heat, add onions, celery, green pepper and garlic until tender, about 4 mins. Add kielbasa and cook for two minutes. Add all remaining ingredients except scallops and parsley. Bring to boil, reduce heat and cook covered for 15 mins, stirring occasionally.
